What is the Sugar Stages mode?

Sugar Stages mode helps you achieve different levels of sugar consistency when heated. As sugar cooks, it changes in texture, color, and taste depending on temperature, time, and the ratio of water to sugar.

This allows you to create various sweets

(like fudge and toffee) and confections (such as caramel and honeycomb) using Guided Cooking.

How does it work?

By cooking sugar to specific temperatures, you can achieve distinct textures and flavors—from fudge (112-116°C) to liquid caramel (170°C). Sugar Stages mode precisely controls the cooking process to reach these desired temperatures.
